anne the schoolteacher

Anne had found the butter churn -- very basic and homemade, but very nearly what she would have used back at Green Gables -- in the compound, where someone obviously kept it to protect it from the elements. The cream she collected herself, in the process keeping the kitchen supplied with enough milk to last a little while, as not nearly enough people on the island appreciated the importance of a glass of milk. While she was sure she would never be friends with the goats, quite, she thought they at least had an understanding now, after a few days of milking.

More importantly, she'd chosen a couple of books to start with, one that she was familiar with and one that she thought they might explore together. Billy would not be a typical student, after all, and there were no requirements for what she must teach him, so she thought she would give him the chance to choose.

So after hauling the churn and the bucket of cream outside, and slipping the two books into the pocket of one of her favourite skirts, she had only to take a seat by her apple trees and wait for Billy to arrive.

"I thought it might be a very good place to start," said Anne, satisfied. "Especially when, upon rereading it last night as I prepared our lesson, it meant more to me than it ever had. Would you like me to take over the churn again, Billy?"

[identity profile] billtallent.livejournal.com 2006-07-31 04:01 am (UTC)(link)
"It was a great first poem, you picked a good one. And I think I got it," Billy said, working the churn rhythmically. "How long does this take exactly?"

[identity profile] island-anne.livejournal.com 2006-07-31 04:11 am (UTC)(link)
"It depends," said Anne. "Sometimes it takes hours, though the milk was soured when I put it in, so it shouldn't take nearly that long. It might even be ready soon."

[identity profile] billtallent.livejournal.com 2006-07-31 05:00 am (UTC)(link)
Billy couldn't imagine doing this for hours. For butter? Billy didn't like butter that much. "Should we check it?" Billy asked.

[identity profile] island-anne.livejournal.com 2006-07-31 05:26 am (UTC)(link)
"Sure," said Anne, "you can take a peek inside if you like and tell me what you see. You'll know if it's separated or not yet."

[identity profile] billtallent.livejournal.com 2006-07-31 07:25 pm (UTC)(link)
Billy stopped churning and took a look inside. "Hey! I think it's done. It looks buttery, at least." He moved aside so Anne could see.

[identity profile] island-anne.livejournal.com 2006-07-31 07:44 pm (UTC)(link)
Anne peeked and there were, indeed, lumps of butter floating around in the buttermilk. "Okay, now we move on to the next step," she told him. She hadn't been able to find any sort of cream ladle, but she'd found a broad wooden spoon that would have to serve as cream ladle and butter pat. "You can scoop the lumps of butter out of the buttermilk and put them in the bowl. We'll want to save the buttermilk for the kitchen, I'm sure they'll have plenty of uses for it."

[identity profile] billtallent.livejournal.com 2006-07-31 07:52 pm (UTC)(link)
"What can you use buttermilk for?" Billy asked, picking up the spoon and the bowl. He handed the bowl to Anne as he started to scoop the butter out of the churn.

[identity profile] island-anne.livejournal.com 2006-07-31 08:03 pm (UTC)(link)
"Well, you can drink it if you like," said Anne, "though I must confess I don't particularly care for it. It's perfectly wonderful for baking, though, and it's clear that there's someone in the kitchen who likes to bake or we wouldn't have any bread at all."

[identity profile] billtallent.livejournal.com 2006-07-31 08:40 pm (UTC)(link)
"True. Good thing to, 'caues I sure as hell couldn't do it. Poutine's as complicated as I get." Billy grinned and spooned the butter into the bowl. It was kind of lumpy, but it looked good.

[identity profile] island-anne.livejournal.com 2006-07-31 08:52 pm (UTC)(link)
"I would very much like it if you made that again," admitted Anne, "but I think we have almost no cheese anymore, and I'm not nearly so confident at making cheese as I am at butter. Is that all of the lumps of butter now? If so, I'll show you how to work it."

[identity profile] billtallent.livejournal.com 2006-07-31 09:07 pm (UTC)(link)
"I'm sure there's someone on the island who can make it, or maybe the bookshelf will help us out." Billy nodded, swirling the spoon around for the dregs. "And yeah, I think that's all of it."

[identity profile] island-anne.livejournal.com 2006-07-31 09:18 pm (UTC)(link)
"I can make soft cheese all right, with a little practice," said Anne, "but really, I think what we need are more goats." She took the wooden spoon from Billy and with the bowl firmly lodged in her lap she started smushing the lumps of butter against the sides. "There's still some buttermilk in the lumps, you see," she told him, and very clearly there was. "It's got to be worked out."

[identity profile] billtallent.livejournal.com 2006-07-31 09:30 pm (UTC)(link)
Billy nodded, watching Anne smooshing the butter together. He tried to remember how Tiffany used to make her cheese, but the only thing he knew for sure was that it involved covered buckets and weird smells.

"I'll never take butter for granted again," he said. "Or cheese."

[identity profile] island-anne.livejournal.com 2006-07-31 09:41 pm (UTC)(link)
"I'm supposing that in your time you could take them for granted," said Anne. "I know that many men don't know how to make these things themselves anyway, and in cities people often have such things delivered to their door, but I've always thought the taste of things made at home was the best. Do you want to try working this?"

[identity profile] billtallent.livejournal.com 2006-07-31 10:05 pm (UTC)(link)
"Sure," Billy said, taking the bowl from her and working on mushing it like Anne had. "In my time all this stuff was available in stores, and so many different varieties, too. None of it was handmade either, it was all mass produced in factories by machines."

[identity profile] island-anne.livejournal.com 2006-07-31 10:10 pm (UTC)(link)
"That sounds..." Well, perfectly dreadful, to be honest, though certainly a lot less work. "Was it any good?" She watched as Billy picked up on how to work the butter. "Once there's a little pool of buttermilk you can just pour it off into the plants and keep going," she told him. "In a few moments I'll need to run and get some cool water and, oh, I do hope there's salt. There must be."

[identity profile] billtallent.livejournal.com 2006-07-31 10:29 pm (UTC)(link)
"It was fine, I mean, the homemade stuff is better but I never had any complaints about the food back home." Billy kind of missed Kraft Singles, actually. He saw some milk gathering in the bowl and obediently poured it out onto a nearby flower. "I think there is, the island seems to have an endless supply of the basic stuff."

[identity profile] island-anne.livejournal.com 2006-07-31 10:48 pm (UTC)(link)
"Oh, thank goodness," said Anne, rising and smoothing her skirt. "Don't go anywhere, Billy, I'll be right back!"

Anne dashed back into the compound for a few minutes, and when she returned had a pitcher of cold water and a small container of salt.

"I haven't found any butter molds yet, so we'll just have to do without," she said, and while Billy continued to work the butter, she poured a bit of the cold water in. "Go a little bit longer and then dump it out again, " she told him. "We'll do that until it comes away clear."

[identity profile] billtallent.livejournal.com 2006-08-01 02:27 am (UTC)(link)
"Got it," Billy said, working the butter steadily, "we'll be drinking fucking butter milkshakes by the end of the day. Butter sandwiches. It'll be awesome."

[identity profile] island-anne.livejournal.com 2006-08-01 02:37 am (UTC)(link)
Anne laughed, and when Billy dumped the water she poured a little more in. "We should make some butter molds," she said. "But not just square butter molds. Pretty butter molds. Do you think that's silly?"

[identity profile] billtallent.livejournal.com 2006-08-01 04:05 am (UTC)(link)
"Not at all, if you're going to do something you might as well do it right," Billy said firmly. "But how are we going to make butter molds?"

[identity profile] island-anne.livejournal.com 2006-08-01 04:18 am (UTC)(link)
"Oh, it's terribly easy," said Anne, "we can make them out of anything. We've just got to be able to squish butter into them to make a shape, and push them out again without wrecking it. Today we're just going to have to make... butter lumps, I think."

[identity profile] billtallent.livejournal.com 2006-08-01 04:45 am (UTC)(link)
"Lumps work. Could we mold them like clay? We can have little butter sculptures. I'll make one in the likeness of Joe," Billy grinned.

[identity profile] island-anne.livejournal.com 2006-08-01 05:42 am (UTC)(link)
Anne laughed again. "Well, I suppose you could," she said, "but it would probably work best if you chilled it a little first. I think fresh butter is a little too soft for sculpting."
